White Chocolate Macadamia Nut Cookies

What are like Chocolate Chip Cookies, but, if I dare say so, are better? White Chocolate Macadamia Cookies! These cookies are TRULY divine! They're so similar to chocolate chip cookies (flours, nuts, & chocolate), but so different. In place of walnuts you put macadamia and in place of chocolate chips you put white chocolate chips.
I looked really hard to find a little dirt (read: background) on these cookies, but with no luck. I'm going to make an educated guess and say that these were derived from the traditional chocolate chip cookies by some innovative culinary genius. I know that Peppridge Farms sells White Chocolate Macadamia cookies in a pre-packaged form. I, for one, hate them. Just to be clear, I love the vast majority of Peppridge Farm cookies, but when it comes to these cookies, they're not quite up to par.

According to Wikipedia, these cookies are Mrs.Field's signature cookies.

Costco's Bakery sells AMAZING white chocolate macadamia cookies (boy oh boy, what would I not do to get my hands on their recipe), but they sell a variety pack. And of course, picky ole' me doesn't like Chocolate Chocolate Chip Cookies.

Recipe Yields: 60 Cookies
Preparation Time: 15 minutes
Baking Time: 8 - 10 minutes per batch

Ingredients

1 ¼ cups butter
1 cup white sugar

¾ cup + 2 tablespoons light brown sugar

2 ½ eggs
2
½ teaspoons vanilla extract
3 cups + 2 tablespoons all purpose flour
1 ¼ teaspoons baking soda
1 ¼ teaspoons salt
1 ¼ pounds white chocolate morsels
6
½ ounce macadamia nuts

Equipment
Measuring Cups/Spoons
Mixing Spoon
Cookie Sheet
Wax Paper

Directions
1. Preheat oven to 375 degree's F
2. Cream butter and white sugar in a bowl.
3. Add light brown sugar to the creamed butter and white sugar, until mixed completely.
4. Mix or stir in the egg(s) and vanilla.
5. Add baking soda and salt. Mix or stir thoroughly.
6. Add flour. Stir it into the creamed mixture until no white specks can be seen. The dough should be golden brown at this point.
7. Add in white chocolate and macadamia. Stir into dough with spoon.
8. Bake for 8-10 minutes (keep an eye out on the oven around 7 minutes, since this over bakes really quickly!)
